My day started out with a dose of life’s sweetness, a little hint of happiness in this cold solitary weather. May the rest of the day be fruitful and be filled with gladness.

Shrimp fajitas
The boyfriend decided to go on a pizza spree one night, and although I do love pizza, I was eager to cook something in my new kitchen.  So, I decided to whip up some shrimp fajitas!
I sauteed the shrimp (I used frozen from Farm Boy) with fresh garlic and lime juice, and then topped my shrimp with some shredded monterey jack cheese, slaw (which I made by adding a bit of white wine vinegar to pre-bagged shredded cabbage), salsa, avocado, cilantro and sour cream.  They turned out so deliciously!  Next time I’d like to add a bit of a smoky flavour to the shrimp, but I haven’t replenished my spices since the move, so I didn’t have anything on hand.
I really like improvising when it comes to fajitas.  I’ve already made these again, but I used tilapia instead of shrimp, and it worked just as well for my taste.
I paired my meal with a glass of Equifera Pinot Noir (I’m really loving Pinot right now, but that’s another post altogether!).

I can’t get enough of sandwiches. Grilled, toasted, wrapped or on fresh bread, my craving for sandwiches never subsides.
Which is why the boyfriend and I love Sippy Cup Cafe’s grilled panini sandwiches.  The ciabatta is so flavourful, flecked with herbs and spices, and the guacamole was a creamy and delicious addition.  It had a bit of a kick too.
Another great thing about Sippy Cup Cafe is their coffee: they serve fair trade, locally roasted coffee.
